Pecorino Romano

A hard, salty sheep's cheese that goes into carbonara, cacio e pepe and amatriciana. Buy a vacuum-packed wedge.

Guanciale

Cured pork cheek, the fatty, peppery base of carbonara and amatriciana. Sold at norcinerie and delis.

Porchetta

Supplì

A fried rice ball with tomato sauce and a string of melted mozzarella, hence its nickname 'supplì al telefono'.
Maritozzo

A soft sweet bun split and filled with whipped cream: a Roman breakfast classic.
Carciofi alla giudia

A whole artichoke deep-fried until crisp, from the Jewish Ghetto. Seasonal: best from about February to April.
Pizza bianca

A flat, oily, salty bread, sold by weight in bakeries. Eat it plain or split and filled with mortadella.
